This new twist in breaded fried shrimps adds more texture, crunch and flavor to the dish. In fact, this fried shrimp recipe uses the grain free shredded coconut for texture and coconut flour to replace regular flour and bread crumbs. This is a very flavorful dish and it might not need any sauce when you eat it, the flavor coming for the shredded coconut will give it the crunch and sweet taste (but still fairly low glycemic). Here are the basic ingredients:

  • 1 pound wild shrimp (Atlantic is best), deveined
  • 1 organic egg, preferably pasture raised
  • 3/4 cup organic shredded coconut, unsweetened
  • 1/2 cup arrowroot powder
  • 1 teaspoon – 2 teaspoons  coconut sugar (optional)*
  • 1/2 teaspoon sea salt
  • dash of ground peppercorns
  • pure refined organic coconut oil for frying
