Lemon lime coconuts are a tasty treat– better than the junk from Halloween

Lemon and lime coconut cupcakes are such a tasty gluten free AND GMO free way to get through post Halloween temptations. Enjoy your weekend with this tropical treat with a twist! Lemon and coconut is such a good combination!

Ingredients for the Cupcakes:
1/2 cup organic coconut flour
1/4 tsp. North Atlantic sea salt
1 tsp. baking soda
1/8 tsp. baking powder
1/2 cup fine cane sugar
1 tbsp. lime zest
1 tbsp. lemon zest
1 tbsp. real vanilla extract
4 pastured eggs
1/2 cup coconut oil, melted
1/2 cup BPA-free natural coconut milk
1/2 cup unsweetened shredded coconut

For the Topping:
1/4 cup coconut cream
4 tbsp. fine cane sugar
1/2 cup coconut oil, room temperature
1 tsp. vanilla extract
1/2 cup unsweetened shredded coconut
extra lemon zest (optional)

Instructions for the Cupcakes:
1. Preheat the oven to 350ºF and line a muffin tin with 8 cupcake liners.
2. In a small bowl, whisk the flour, salt, and baking soda together. Set aside.
3. In another small bowl, mix the sugar, zest, and vanilla bean (or extract) together to meld the flavors together. Set aside.
4. In a large bowl, beat the eggs until foamy, and then add the melted coconut oil and coconut milk. Stir until smooth.
5. Combine the lemon lime mixture, mix until well incorporated.
6. Gradually add the coconut flour mixture, and then add the shredded/flaked coconut.
7. Scoop 1/4 cup of batter into each of the prepared muffin tins.
8. Bake at 350ºF for 18-20 minutes, until a toothpick comes out clean.
9. Cool for about 10 minutes in the pan, and then remove to a wire rack to cool.

For the Topping:
1. Toast unsweetened shredded coconut at 350ºF on baking sheet approx. 7 minutes, until golden brown and then allow to cool.
2. Beat the coconut cream with a hand mixer.
3. Gradually add 4 tbsp. of cane sugar, coconut oil, and vanilla extract until texture is light and fluffy.
4. Spread the frosting onto the cooled cupcakes using a spatula.
5. Sprinkle the toasted coconut and top with lemon/lime zest.
6. Enjoy!
