Ingredients Needed (Use organic versions when available)

For mousse

  • One cup shelled raw hemp seeds 
  • About 1 cup organic raspberries
  • One cup raw cacao powder
  • 1/2 cup raw real honey
  • 1/4 cup virgin coconut oil
  • Three tablespoons cool purified water

To make the crust

  • 1/2 cup soaked then dehydrated walnuts (non fumigated)
  • 1/2 cup coconut flour
  • About 4 pitted medjool dates 
  • 1/4 cup  raw real honey
  • About 1/2 tsp sea salt
  • 1/2 teaspoon real vanilla extract

Directions

For Crust
Step 1Combine ingredients into food processor & process until combined and well formed into a ball. Form the crust mixture into mini-cheesecake pan or the equivalent.
For Mousse
Step 2Combine water, 3/4 of  raspberries, coconut oil & raw honey in a good blender and blend until smooth. Add cacao powder and hemp seeds. Blend again until same consistency.Pour mixture on top of the crust in the pan.Refrigerate for about 1 – 2 hours until mixture firm so that it can be cut easily with a cake knife.Top with the rest of the raspberries and cut those squares and serve.Bon appetit!
